Treat yourself to a hearty aubergine bake filled with all the rustic flavours you love, without packing in all the carbs.
- 2 medium aubergines
- Tomato pasta sauce
- Mozzarella cheese, grated
- Salt and pepper
- Olive oil
Preheat the oven to 160 degrees Celsius.
Slice the aubergines and grill until done.
Layer the aubergines, mozzarella cheese and tomato pasta sauce, adding herbs and parmigiano as you go along.
Bake in the oven for 30 minutes and enjoy!
